As for Guinness Nigeria, they use an unfermented, hopped extract shipped in from Dublin and add it to unspecified local ingredients. My guess is that certain ingredients are easy to get locally, the others are not of the same quality (or quantity) as those available in Dublin, so the extract replaces those that are harder to come by.

They have used sorghum in the past in Nigeria, maybe still do.
The item shipped from Dublin is Guinness Blending Agent, also known under a variety of names, sent to all overseas breweries brewing Guinness.
For detailed information get your hands on a copy of " A Bottle Of Guinness Please " by David Hughes a brewer of Guinness for 16 years including time in Nigeria.

I had a bottle of Guinness FES recently and the only thing that stopped me tipping it out was that I was in (not driving) a moving vehicle and had no where to get rid of it except my stomach. Tasted worse than the least appealing kit stout I have ever thought of trying.
